A week to celebrate the skill of an ancient trade of converting an animal carcass into cuts of meat suitable for cooking at home and the ability to utilise all the carcass with minimal waste. Not only do butchers cut meat but they are also very knowledgeable and dare I say skilled in providing advice on cooking methods for various cuts of meat from roasting, braising, slow cooking, searing etc.
Here at Stoneygate we will celebrate the week with a series of demonstrations and events to showcase our butchery skills and the quality and provenance or our meat and the importance using local supply chains in todays ….
